Delicious! Vietnamese vegetarian noodles

Asia is the land of noodles. Whether you go north to Japan or south to Indonesia, you will see plenty of noodles. It is an absolute staple, and we have made it our mission to try as many variations as possible.

Here we were riding a scooter in the Mekong Delta and came across this dive with quite a few customers. The great thing about being on a scooter is that you can just pull right in whenever something catches your eye. We walked in, and people curiously looked at us for not knowing how to order. It was clearly a spot mostly frequented by locals.

Despite the language barrier, the owner smiled and made us this incredible bowl of vegetarian noodles. The broth was surprisingly rich and flavorful, packed with fresh herbs, tofu, and perfectly cooked noodles. Sometimes, the absolute best meals are the unexpected ones you stumble upon while exploring off the beaten path!
